Pan Fried Scallops with Gin
The natural sweetness and rich texture of the scallops is perfectly balanced with the floral and spicy notes of our Black Fox Gin #3. and finished with a lively burst of grapefruit. This appetizer is well rounded, with an abundance of flavour. A total crowd pleaser!
1 lb fresh scallops
2 Tbsp olive oil
2 – 3 oz Black Fox Gin #3
Salt and pepper
Cut half of the grapefruit into supremes, reserve the second half for juice. Dry scallops and season with salt and pepper. Heat oil in a large skillet over medium-high heat.
Once skillet is hot, add scallops. Cook until the bottom half begins to brown, turn scallops over. Cook second half until there is just a small line of raw visible in the middle of the scallop. Remove from pan to serving plate.
Return the skillet to heat, squeeze grapefruit juice into skillet (roughly 1/4 cup) and then add 2- 3 oz of Black Fox Gin #3. Swirl liquids in pan and allow to cook down slightly. Add to serving plate.
Serve with grapefruit suprêmes and garnish with fresh mint.
*Note: Any citrus fruit could work well in this recipe. Fresh greens would also be a great addition.
