Pantry Secrets – Syrups
Simple syrup is an ingredient found in many cocktail recipes but it is very simple to make at home with just a few ingredients and it is incredibly versatile, you can add just about anything to it to change the flavour completely and really enhance a cocktail. Here we’ll lay out how to make a simple syrup and then we’ll offer a few of our favourite syrup recipes to pair with our gins.

Basic Simple Syrup
Ingredients
1 cup granulated sugar
1 cup water
Directions
Add ingredients to a small saucepan and bring to a boil. Once sugar is dissolved, remove from heat and allow to cool completely. Transfer to a jar or container and store in the refrigerator for up to one month.
You can customize your simple syrups with countless ingredients including herbs, citrus peels, and spices. The possibilities are endless. Here are a few of our favourite syrup recipes that we pair with our gins:
Spiced Orange Syrup
Ingredients
1 cup brown sugar
1 cup water
1 cinnamon stick
2 cloves
2 allspice berries
Peel from orange
Directions
Combine all ingredients in a saucepan and bring to a boil. Remove from heat and allow to cool completely. Strain syrup and transfer to a jar or container.
Lemon Rosemary Syrup
Ingredients
1 cup granulated sugar
1 cup water
1 sprig of rosemary
Peel from lemon
Directions
Combine all ingredients in a saucepan and bring to a boil. Remove from heat and allow to cool completely. Strain syrup and transfer to a jar or container.
Mint Syrup
Ingredients
1 cup granulated sugar
1 cup water
1 sprig of mint
Directions
Combine all ingredients in a saucepan and bring to a boil. Remove from heat and allow to cool completely. Strain syrup and transfer to a jar or container.
Grapefruit Thyme Syrup
Ingredients
1 cup granulated sugar
1 cup water
2 sprigs of thyme
Peel from Grapefruit
Directions
Combine all ingredients in a saucepan and bring to a boil. Remove from heat and allow to cool completely. Strain syrup and transfer to a jar or container.
Lilac Simple Syrup
Ingredients
1 cup lilac flowers, stems removed
1 cup sugar
1 cup water
A few blackberries for colour (optional)
Directions
Combine lilac flowers and sugar in a sealable container and allow to infuse for 24 hours. Add mixture to a small saucepan with 1 cup water and berries if using, and bring to a boil. Remove from heat and allow to cool completely. Strain through a fine-mesh sieve, and strain a second time through a coffee filter. Store in the refrigerator.
