Sour Cherry Crêpe Cake
A visually stunning, multi-layered masterpiece, this delightful crêpe cake is created with our decadent Sour Cherry Liqueur. An absolute show stopper!
1 cup cold milk
1 cup cold water
1 1/2 cup all-purpose flour
2 tsp sugar
1 tsp salt
2 tbsp melted butter
1 cup goat cheese or cream cheese
2/3 cup whipping cream
1 tsp almond extract
350 g sour cherry jam
2 tbsp Black Fox Sour Cherry Liqueur
Add milk, water, eggs, and butter to a bowl of a stand mixer. Mix until combined. In a small bowl, whisk together flour, sugar, and salt. With a stand mixer running on low, slowly add the dry ingredients to the wet ingredients. Mix until completely combined. Pour batter through a fine-mesh strainer. push any clumps through with a spoon. Refrigerate for at least 2 hours.
Heat a frying pan on medium until water droplets sizzle immediately when they hit the pan. Add 1/4 cup of batter to the frying pan, swirling it until it coats the bottom. Cook until the edges begin to brown. Flip and cook for another 30 seconds. Repeat with the remaining batter. Refrigerate crepes until cold.
Place crepe on serving platter. Spread 1 – 2 tbsp goat cheese mixture on top of it followed by 1 tbsp of sour cherry mixture. Place crept on top and repeat.
Dust with powdered sugar, if desired.
