If you are exploring the nuances of premium Canadian whisky, our strictly limited Cask Finish Whisky offers an extraordinary tasting experience. This expression begins as a fully matured, deeply structured single grain whisky.
To elevate this spirit, we transfer it into carefully selected Amarone wine casks from northern Italy. Known for being crafted from partially dried grapes, Amarone casks are celebrated for producing a bold, full-bodied wine with intense flavour and robust structure. During this secondary maturation beneath our extreme Saskatchewan prairie skies — enduring temperature fluctuations from -40°C to +40°C — the wood enhances the whisky's complexity, introducing rich notes of dried fruit, spice, and subtle tannins.
Each expression responds uniquely to its environment and the influence of the wine infused into the wood. As a result, every release is bottled individually to showcase its distinct personality. This specific Hordeum vulgare (barley) Amarone cask finish is a rare, small-batch release of only 774 bottles.
Nose: Deep and inviting, with sweet vanilla weaving through rich oak, brown sugar, and velvety chocolate — a prelude to indulgence.
Palate: A luscious harmony of dark dried fruits and butterscotch, unfolding into toasted oak and supple leather. The warmth of baked apples draped in cream adds a comforting richness.

We had an awesome experience and Black Fox distillery. Such a beautiful property to come and relax at and sample some gin. The staff was very informative and the atmosphere was so welcoming. The whisky was also great but the gin stole the show for us. Definitely couldn’t leave without a bottle of Haskap gin and Sage gin! They will be very much enjoyed this summer! 😍
