Bright and effervescent, the Black Fox 425 combines the tart sweetness of Haskap gin with zesty lemon and warm candied ginger, finished with a delicate sugar rim and sparkling soda for a light celebratory fizz.

Ingredients
- 1.5 oz Haskap Gin
- 0.5 oz Candied Ginger Syrup
- 0.75 oz Fresh Lemon Juice
- 2–3 oz Soda (or Prosecco) to top
- Candied Ginger Garnish
Equipment
Boston shaker set, jigger, hawthorn strainer, fine-mesh strainer, plate, sugar, citrus wedge, candied ginger.
Techniques
- Sugar Rim: Teaches precision and clean glass preparation. Rolling only the outside prevents sugar falling into the drink and altering balance.
- Shake for aeration and temperature: This drink relies on citrus, so shaking introduces micro-aeration, softening acidity and creating a more elegant texture.
- Double Strain: Removes ice chips for a silky finish — especially important before topping with bubbles.
- Top last to protect carbonation.
Directions
- Prepare the glass:
- Run a citrus wedge around the outside of the flute’s rim.
- Lightly roll in sugar to create a halo.
Note: Uneven pressure creates patchy rims; consistency is key for presentation. - Build the cocktail in the shaker:
- Add Haskap gin, ginger syrup, and lemon juice.
- Shake:
- Add ice and shake vigorously for 10–12 seconds.
- A proper shake uses the entire arm and creates a tight seal.
Teaching note: The sound of the shaker changes when dilution is optimal. - Double strain:
- Use the hawthorn strainer over the fine mesh as you pour into the flute.
- Removing ice shards prevents harsh edges and keeps the carbonation from over-foaming.
- Top with bubbles:
- Slowly add soda or Prosecco to preserve effervescence.
- Leave a little space at the top for aroma release.
- Garnish:
- Place a skewer of candied ginger on the rim or rest it across the top.
- Note: Aromatic, edible garnishes enhance nose-first tasting.
